The book entitled advances in ‘Indigenous Dairy Products’ is based on the works and findings of different eminent scientists working in the dairy sector with a view to introduce the different milk products prepared through indigenous technology in the particular area viz. milk sweets of Varanasi is not aware by many people of this state itself. Thus the main objective of this book is to familiarize these products amongst the Scientist, teachers, students and finally the consumers not only in Indian Society but in the global context also.
