From the preface: The second edition of Milk Products appears at a time when consideration of the various problems dealt with in the text calls for urgent attention. Recent disease outbreaks have tended to focus the spot light on ice-cream, while commodities into which milk enters in one form or another are now receiving the publicity and attention which they have always merited, but, let us hasten to add, which they did not always receive.
