"Post-Harvest Technology and Value Addition is considered as a major initiative in bringing economic empowerment of farming community. It includes various aspects such as processing, preservation, packaging, marketing and utilization. A variety of value added products developed as a result of processing technologies would not only help in improving the nutrition and health of our people but would help in accelerating their export as well. It is in this context that the Indian society of Agricultural biochemists and C.S. Azad University of Agriculture and Technology, Kanpur, organized an International Conference on Post-Harvest Technology and Value Addition in Cereals, Pulses and Oilseeds in which papers on aspects of the use of biotechnology for value addition in crops, advances in post-harvest technology and value addition in cereals and pulses and improvement of edible oils and on other related processing technologies were presented and discussed.
All the important papers presented during the Conference have been compiled in this publication. The publication will benefit the research scholars, scientists, technologists, industrialists and all others engaged in research and development in post-harvest technology and value addition."
